Hilâl Sicilian-Tunisian dairy chain - traditional cheeses through new technologies (HI.L.F.TRAD)

The aim of the project is the creation of an institutional network between researchers and subjects involved in the project in order to transfer knowledge and technology for the production, conservation and development of traditional raw milk cheese from sheep in the region of Beja (Tunisia). Promotion of sustainable development of rural areas concerned by the risk of depopulation. Exchange of knowledge and common experiences in order to promote territorial integration, as well as the defense and promotion of traditional dairy products. Expected Results: • to demonstrate the uniqueness of traditional Tunisian cheese;• to adjust local production to the needs of the internal market and provide support services to accompany its commercialisation;• to improve the quality of production system, in order to implement the rules of quality certifications;• to develop a model of collaboration and transfer of innovation processes and product between companies, applied research centres, financial institutions, NGOs and other public / private partners. Product certification (DOP, IGP, etc.);• to increase the added value of the production of milk-cheese and competitiveness on domestic markets;• to start a management model of local marketing according to the networking of operators;• to harmonize regulations and quality standards and to study an integration policy in order to encourage young people and women to stay at work in Tunisia.
