The project focuses on the young people attending the 4th year of high school and recent graduates who have qualified within one year, in a process of lifelong learning and knowledge sharing. The work-based learning will allow a greater adherence of the competences and knowledges system possessed by the participants with the demands of market, organizations and world of the job, also with the purpose to give them the opportunity to find their way in the creation of innovative enterprises in TOURIST and OENOGASTRONOMY sector. The purpose of the internship is to train people with expertise in Italian and international cuisine, in hospitality and tourism promotion, with reference to the tradition and culture of the host country, in order to promote, through greater knowledge and skills, new opportunities for employment and self-employment. In fact, the hosting territories, exercises and operators of catering, chosen for the conduct of the project, will provide a wealth of knowledge, a system of skills, a set of stimuli and incentives that will support the trainees in a professional and personal path of growth . The lessons and the coaching taught by chef, reception and restaurant managers lead the young participants in the professional world of gastronomy, thanks to the experience of new and alternative methods of preparation, different from regional traditions, and will be able to learn the techniques tasting and pairing of wine and food. The teaching- operational learning plan will include: - Nutrition. - Techniques and practical cooking. - Sensory analysis. - Elements of enology and wine pairing. - Elements of food and beverage management. - History, culture and traditional dishes of the host country. - Cuisine of the host territories. - Food safety - HACCP, Hazard Analysis and Critical Control Points. INTERNSHIP TRAINING will be divided according to three COURSES, with specific objectives: OENOGASTRONOMY (Cuisine), TOURIST (Reception) and RESTAURANT AND BAR SERVICE. The professional characteristics that CNOS FAP Federation wants to build through this mobility project, combine a set of precise TECHNICAL-SECTORIAL COMPETENCES with solid BASIC and TRANSVERSAL SKILLS, as indicated in EU guidelines. This is because the incessant transformations characterizing the world of work impose the necessity to attach importance, both to the technical - professional component, and also to the "integrative" components, based on cognitive, procedural, behavioral competences. In other words, those general and wide-ranging skills that: on one side concern to know how to communicate with the specific terms and expressions of the sector, to analyze and read business contexts, to recognize own rights and duties in the working place, to properly use the ITC tools; on the other side, they are connected to the processes of thinking and knowledge, to the formalities of behavior in the social and working contexts, to the capacities to think, to work in team and on objectives, to use strategies of self-learning and of self -correction. The PROJECT is divided into phases of coordination , selection, cultural and linguistic preparation pedagogical training in the company , monitoring and evaluation of the internship, the overall assessment of the project, dissemination of results. The period of apprenticeship will last 1 MONTH and will be articulated in 6 fluxes. It foresees the total involvement of about 47 young people. Such number has been analyzed and arranged by the proponent organization CNOS-FAP Federation and the European partners. The involved countries will be: SPAIN, GERMANY, MALTA, ROMANIA, UNITED KINGDOM, BULGARIA. The METHODS used during the project are : learning organization , approach to stakeholders , networking, knowledge management. The project management will be structured in accordance with the System of Management for Quality, implemented ad hoc for the formative work learning in foreign countries, by CNOS-FAP. Such system foresees a set of activities with the elaboration of objective evidences in order to guarantee to the beneficiaries the quality of the processes of learning and the attainment of the planned competences. The System of Management according to an approach for stakeholder and knowledge management and knowledge sharing, includes: 1. meeting with the Partners (ESMOVIA, TRANING VISION, Bulgaria GATEWAY, BERLINK, PARAGON Europe, I VIAGGI DI NIK); 2. the signature of an agreement; 3. "Quality Commitment." Our priorities in terms of attended IMPACT are: - to create alliances and sectorial collaborations for the development of the "mobility transnational and virtual", through a set of activities based on the Information Technology, such as e-learning; - to adopt tools for the transparency and the recognition of the results, tools that allow interested parts to understand, appreciate and recognize the results of the learning.
